Fast Mashed Black Beans (Truly Mexican)
Ingredients
2 can (15-ounce) black beans, including liquid, plus 1/2 cup water
2 tbsp olive oil
1 tsp onion powder
1/2 tsp garlic powder
1/2 tsp dried oregano, preferably Mexican, crumbled
Directions
Put all the ingredients in a small saucepan and bring the mixture to a simmer over medium heat.
Simmer the beans vigorously, mashing them slightly with a bean or potato masher (or a fork), 3 to 5 minutes. Season to taste with salt.
