Zucchine (Shaved Zucchini, Stracciatella, and Mint)

Makes enough for one 10- to 12-inch pizza

INGREDIENTS

1 small zucchini, finely grated (about 3/4 cup / ~150g)

1/2 cup (50 g) freshly grated Parmigiano-Reggiano cheese, plus some for sprinkling

1 tablespoon (15 ml) extra-virgin olive oil, plus some for finishing

Sea salt and freshly ground black pepper

2 ounces (57 g) stracciatella or burrata cheese

5 or 6 fresh mint leaves

DIRECTIONS

1. Prepare the Zucchini Mixture Just before baking the pizza, grate the zucchini and mix it with the Parmigiano and oil in a small bowl.

Season with salt and pepper until it tastes good to you.

2. Assemble

Quickly shape your pizza dough so that water doesn't leak out of the zucchini and make the pizza soggy.

After shaping the dough, quickly spread the zucchini mixture over the pizza in an even layer all the way to the rim.

Sprinkle with a little more Parmigiano.

3. Bake

Cook the pizza until it is slightly darker than usual to help drive some of the water out of the zucchini.

4. Finish

After slicing, finish it with dollops of the stracciatella.

Scatter on the mint leaves and drizzle on a little oil.
