Tempeh Shawarma

* 4 whole wheat pita
* 1 tsp cumin
* 8 basil leaves, cut into thin strips
* 1 tomato diced
* 1/4 cup marinade for tempeh croutons (see below)
* 1 package 227g tempeh squares
* 1/2 head lettuce washed and cut into thin strips
* 8 mint leaves cut into thin strips
* 1/2 large cucumber cut into thin strips
* 1/2 cup tahini lemon garlic dressing (see below)

marinade:
* 1 small can (156ml) tomato paste
* 1/4 cup white wine
* 1/4 cup soy sauce
* 1 tsp red chili flakes
* 1/2 cup water
- place the first 5 ingredients into a bowl and mike, mix should be quite thin, adding more water if necessary

Tahini lemon garlic dressing:
* 1/4 cup raw tahini
* 0.5 tbsp garlic (minced)
* 0.4 cup lemon or lime juice
* 0.25 cup olive oil
* 0.5 tbsp sea salt
* half of 1/3 cup of water
* 0.5 tbsp cracked black pepper

directions:

- cut tempeh into triangles and then cut each triangle into two thin triangles

- marinate tempeh triangles in tomato marinade, set aside for 1/2 hour

- in a pan saute tempeh and place 2 pieces in the middle of each pita

- place equal amounts of lettuce, tomato, cucumber, herbs and dressing in each one

- wrap and eat fresh or grill for 2 minutes
