Sweet and Spicy Stir Fry
Makes: Enough for 2 people with some left over for the next day
* 2 cups broccoli florets
* A red pepper, sliced
* 2 or 3 carrots, sliced
* 2 tablespoons olive oil
* 1/4 cup sliced green onions
* 4 cloves garlic, thinly sliced
* 2 tablespoons hoisin sauce
* 2 tablespoons chile paste
* 2 tablespoons soy sauce
* 1 teaspoon ground ginger
* 1/2 teaspoon crushed red pepper flakes
* 1/2 teaspoon black pepper
* 4 cloves garlic, thinly sliced
* 1/4 cup water with a couple tablespoons of sugar
* 1 package of those yellow stir fry noodles
1. Place broccoli, red pepper and carrots in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 5 minutes.
2. Heat the oil in a skillet over medium heat, and saute the green onions and garlic.
3. Stir the hoisin sauce, chile paste, and soy sauce into the skillet. Season with ginger, red pepper flakes, and black pepper.
Stir in the water/sugar and simmer about 2 minutes. Mix in the steamed broccoli/red pepper/carrots until coated with the sauce mixture.
